225g plain flour
1 teaspoon baking powder
100g butter
60g caster sugar
500g Bramley Apple –peeled and cored
1 large free range egg
A little apple juice
A little grated lemon zest
25g Demerara sugar
A little cinnamon
Method:
Mix the baking powder into the flour and cut the butter into small cubes and rub the butter into the flour using your fingertips until it resembles fine breadcrumbs, or if you have a food processor then blitz quickly in that.
Add the sugar, and the lemon zest, and the apples which have been roughly chopped. Lightly beat the egg and stir in, adding a little apple juice (or milk) to give a fairly stiff mixture.
Spoon your mixture into a shallow tin, approx. 9 inches (23cms) square, which you have greased and lined the bottom of the tin with greaseproof paper. The mixture should look quite rough. Then sprinkle with the Demerara sugar, and the cinnamon spice.
Bake at 180C for 40-45 minutes until firm and lightly browned.Leave to cool in the tin, before cutting into large squares.
This is a very simple and delicious recipe, serve on its own as a cake, or serve warm as a desert with cream, ice cream or custard.
