Toby’s Christmas Dinner

Ingredients
1 x 12lb Bowtells’ Norfolk Black Turkey
English butter for basting
1 onion, peeled
1 apple, quartered

Method

1. Wash turkey inside and out and dry well. Spread butter over the skin. Season with salt and pepper.

2. Place a peeled onion and a quartered apple inside. Stuff neck cavity with herb stuffing or cook separately.

3. Place bird in roasting tin to which a little water has been added. This helps to keep the bird moist and is useful when making gravy.

4. Cover with foil. Cook for 4.5 hrs basting occasionally. To check if cooked, pierce the deepest part of the thigh with a skewer. If juices run clear, bird is cooked, if pink tinged, cook for a little longer.

Will serve 10 people for one meal.
