Ingredients
4 trout steaks
1 small onion, chopped
30g butter
250g chopped mushrooms
100g white breadcrumbs
25g chopped parsley
Salt and pepper
Juice of 1/2 lemon
Method
1. Fry onions in half the butter until golden. Mix with mushrooms, breadcrumbs and parsley. Season to taste.
2. Spread mixture in buttered ovenproof dish. Lay trout steaks on top and dot with remaining butter.
3. Bake covered at 160c for 15 minutes, then uncover, sprinkle with lemon juice and return to the oven for further 5 minutes.
Alternative
The same mix can be used as a topping for individual steaks, wrapped in buttered foil and baked as above.
